Still a little groggy from Friday’s St. Patrick’s day festivities but I pulled it off, my first catered event. Guinness Soaked Corned Beef with Leprechaun Bacon, Cabbage and Buttery Potatoes. I was concerned that the mammoth 25lb corned beef I bought was a little overkill and had recited on the fact that I’d probably be selling reubens on Sat. However, I was pleasantly surprised when it was all eaten and with time left for me to get my Shame-Rock On as well.
